Cherry Cardamom Hamantaschen

Hamantaschen are triangular pastries associated with the Jewish holiday of Purim. We have teamed up with Umpleby’s Bakery & Cafe in Hanover, NH to create this jammy cookie that is rich in history!
  • 6 ounces room temp butter
  • 5 ¼ ounces sugar
  • ¾ tsp salt
  • 2 Tbsp grated lemon zest
  • 1 tsp vanilla extract
  • 1 ½ tsp ground cardamom
  • 11 ½ ounces all purpose flour
  • 3 Tbsp cornstarch
  • 2 tsp Baking Powder
  • 2 eggs

Instructions.

  • 1 Preheat oven to 350F degrees
  • 2 Cream butter, sugar, and salt until light and fluffy. Slowly add the remaining ingredients and mix until combined thoroughly. Dough will be on the stiff side.
  • 3 Wrap and let rest in fridge for at least an hour for best results.
  • 4 Roll to about ¼ inch thickness and cut with a 3/12-inch circular cutter.
  • 5 Fill with a generous tablespoon of jam and shape to make the traditional 3-point hat.
  • 6 Bake on a sheet tray, lined with parchment, until light golden, approximately 12- 15 minutes, let cool and Enjoy!
